The “Big Game” is this Sunday, which means lots of friends and families will be gathering together to watch the Super Bowl.  Such parties usually include tables full of salty snacks and rich desserts. Because we at the Law Offices of Edward A. Game Details

Much of Northern California will be rooting for the San Francisco 49ers, who are matched up against the Kansas City Chiefs.  Fun fact: this Sunday’s game marks the first time two teams with primarily red uniforms will play each other in the championship!  This year’s game will be played at the Hard Rock Stadium in Miami, Florida – the expected forecast that day is around 70 degrees and sunny.  The unofficial kick-off time is 3:30 Pacific Standard Time, and the game airs on Fox.

There are many opinions about what makes a food “healthy” or “unhealthy.” It is not always helpful to demonize food items, and “moderation in all things” is usually a good rule.  There is a school of thought that some foods such as gluten and dairy can cause more inflammation than others. Reduction of inflammation is a key to good health for all people, but especially for our trauma clients, so we wanted to offer a healthier appetizer recipe and a delicious “mocktail” for those who will be avoiding the keg line this weekend!

Dairy-Free Buffalo Chicken Dip

This delicious appetizer is just as flavorful as the traditional recipe.  Adapted from a recipe created by Paleo Running Momma

Ingredients:

2.5 cups cooked, shredded chicken breast (Rotisserie is fine)

1 Tbsp Olive Oil

2 cloves garlic, minced

⅔ cup Primal Kitchen or Tessamae mayo

⅔ cup coconut cream (chill a can of coconut milk, the cream is the thick part at the top)

1 Tbsp brown mustard

1 tsp garlic powder

1 tsp onion powder

1 tsp dried dill

1 tsp smoked paprika

⅓ cup Franks Red Hot Original

1.5 Tbsp fresh lemon juice
